Saoto Soep

Saoto is a traditional Javanese chicken soup that was introduced to Suriname by the Indonesians and became very popular among Surinamese. Today, while the streets were flooding with tropical storms in Paramaribo, all I desired to do is have this bowl of flavorful soup. My parents and I sat down in near by historical Independence Square to enjoy our Saotos. The perfectly shredded chicken, crunchy fried vermicelli noodles, lemongrass and boiled egg make a rainy day feel so great! I added a touch of sambal (very hot Cayenne - pepper condiment) spice that woke up all my senses.

I am looking forward to tasting this again, perhaps even trying to recreate sometime.
